Where I Found This Recipe
I found this recipe one day when I was flipping through my absolute favorite magazine – in fact, it’s the only magazine that I take the time to read – Taste of Home Magazine. Can you believe I actually pay for a subscription to something? Well, I can tell you truthfully that I do pay for some subscriptions, but I always try to find a deal, or a free month or some sort of discount.
Freezing Ripe Bananas
I do love Taste of Home Magazine so much and one day around Easter, I stumbled upon this delicious Banana Orange Cake Recipe and I knew I just had to give it a try – especially because I have a habit of freezing our over-ripe bananas and this was the perfect way to use them.
You can read more about how to freeze bananas here in case you’ve never thought of this idea before. It’s a frugal way to use up your produce that you spent money on – plus letting the bananas get extra ripe, sweetens them up even more and makes them prefect for baking.
How To Make This Recipe
I made the recipe exactly like it said to in the magazine, but instead of just making them into bars, I made choose not to cut them and just kept the cake in the pan and frosted it like a birthday cake.
I added the delicious orange frosting and then added multi-colored sprinkles to the top. It was adorable and made for a fun twist on a birthday cake. Especially if your kid loves citrus and banana flavors. When you serve it at a party, just slice the cake and serve individual portions. Of course, if it’s for a birthday party, don’t forget to add candles, and sing happy birthday first!

The official name of this cake on the Taste of Home website is Banana Bars with Orange Frosting. Here is the actual recipe that I got right out of the Taste of Home magazine.
Cake Ingredients:
- 2 cups mashed ripe bananas (I used about 5 medium frozen bananas)
- 1 & 2/3 cups sugar
- 1 cup canola oil
- 4 large eggs (room temperature)
- 2 cups all-purpose flour
- 2 tsp baking powder
- 1 tsp salt
- ½ tsp baking soda
- 2 tsp cinnamon
Orange Frosting Ingredients:
- 5 Tbs butter, softened
- 4 ½ cups confectioner’s sugar
- 5 Tbs orange juice
- ½ tsp orange zest
Directions to Make Orange Banana Cake
Step #1:
Beat bananas, sugar, oil, and eggs until smooth.
Step #2:
In separate bowl combine flour, cinnamon, salt, baking powder, baking soda and mix well and gradually beat into the banana mixture.
Step #3:
Pour into a greased 9 x 13 pan. Bake at 350 degrees for 30 minutes. Check for doneness by sticking a knife in the center and seeing if it comes out clean. If it doesn’t stick back in the oven for another 3-8 minutes.

Cool completely on a wire rack.
Step #5:
Making frosting by creaming butter and sugar until light and fluffy.

Cake Variations
I’ve not tried this recipe as cupcakes, but I’ll bet it would work just fine. If you want to try cupcakes, just cut down your baking time a bit – I’d suggest about 18-20minutes to start. Check them at 18 minutes and add more time if necessary.
Make sure to cool them completely before adding orange frosting, or it will melt and slide right off.
